I prefer raw cauliflower, but this dressing with steamed cauliflower is good.-Mike
Serves 4
1 Tbs. (15 ml) olive oil
3 Tbs. (45 ml) chopped organic nuts
1-2 minced garlic clove
1 tsp. (5 ml) organic lemon zest
1 Tbs. (15 ml) or more to taste, organic lemon juice
3 sprigs (dried= 1 tsp./5 ml) chopped parsley
1 head of organic cauliflower florets
1. Sauté the nuts over medium heat with oil for about 1-2 minutes.
2. Stir in the garlic and sauté another minute.
3. Remove from the heat and transfer to a bowl and let it cool.
4. Mix in the lemon zest, lemon juice, and parsley.
5. Steam the cauliflower until it is tender but still has a bite, about 3-5 minutes.
6. Allow to cool slightly.
7. Toss with the dressing.
