Ciboney are pre-Spanish people of Cuba. Their foods and dishes still are found among Cubans and descendant Ciboneys. Serve alongside fish as well as other foods.
Salsa de Aguacate
Makes about 2 cups (480 ml)
2 avocados
2-4 Tbs. (30-60 ml) organic lime juice or adjust for taste
1/2 cup (120 ml) drained pimiento-stuffed olives, sliced or chopped
1 Tbs. (15 ml) drained capers
6 Tbs. (60 ml) olive oil
black pepper to taste
1. Use a folk to mash the avocado with the lime juice.
2. Stri in the olives,capers, and oil.
3. Season with black pepper.
