Add the sesame seed tahini sauce to any meat dish.
Arnabiyeh (Arabic)
Makes about a cup (240 ml)
2 Tbs. (30 ml) extra-virgin olive oil
3 cups (600 g) chopped organic onions
3 cups (720 ml) boiling water
1 cup (200 g) mix tahini* well (is gluten- and dairy-free)
3/4 cup (180 ml) organic grapefruit juice
1/4 cup (60 ml) organic orange juice
3 Tbs. (45 ml) organic lemon juice
1 cup (200 g) canned organic garbanzo beans, drained
1. Preheat the oil in a pot over medium-high heat.
2. Add the onions, reduce the heat to medium, and cook until they are tender, not brown.
3. Add the boiling water, tahini, and citrus juices.
4. Use a whisk to blend the mixture until it is smooth and creamy.
3-5 Tbs. (45-75 ml) extra-virgin olive oil
1. Add the sesame seeds to a dry saucepan over medium-low heat.
2. Toast, stir until they are very light in color, not brown, 3-5 minutes.
3. Transfer to a baking sheet and cool.
4. Add the seeds to a food processor and process about 1 minute.
5. Add 3 Tbs. (45 ml) oil and process 2-3 minutes. (Scrape the side and bottom).
6. It should be smooth, not gritty.
(a) It might need to process for another minute or add a little more oil.
7. Store in the refrigerator for one month.
