Serves 4
3 Tbs. (45 ml) olive oil
2 medium onions, thinly sliced = 2 cups (480 ml)
1 lb. (450 g) organic potatoes, not skinned, cut into 1/4-inch (65 mm) slices
1 tsp. (5 ml) ground turmeric
1/2 tsp. (2,5 ml) ground cumin
1/4 tsp. (1,25 ml) cayenne pepper
1. Cook onions on medium heat in the oil for 10-15 minutes.
2. Let the onions drain on a line baking sheet with a layer of two paper towels.
3. Add potatoes, turmeric, cumin, and cayenne to
the oiled skillet, stir to coat the potatoes with the spices, for 10-15 minutes.
4. Transfer to a bowl.
5. Stir in the onions.
