German potato pancakes are not just for the holidays; any breakfast will do!

Makes 4 pancakes
2 medium organic boiling potatoes, grated
2 organic eggs, slightly beaten
2 Tbs. (30 ml) all-purpose flour
2 organic green onions, chopped
1/2 tsp. (2,5 ml) salt
1/2 tsp. (2,5 ml) salt
1 minced clove of garlic
1 Tbs. (15 ml) butter
each organic: sour cream and applesauce
ein 1. Combine the potatoes, eggs, flour, salt, green onions, and garlic in a bowl.
