Spread over chicken, fish, or vegetables!
1 small head organic cauliflower, stem and chopped (= 4 cups/800 g)
1 cup (200 g) organic spinach
1/2 cup (100 g) parsley
1 1/2 Tbs. (25 g) toasted organic pine nuts
2 Tbs. (30 ml) Parmesan or dairy-fee cheese
1. Process the cauliflower in a blender until resembles rice grains.
2. Set aside in a bowl.
3. Process the spinach, parsley, pine nuts, cheese, and 1 Tb.s (15 ml) olive oil.
4. Add cauliflower to a pan and cook about 8 minutes.
5. Add pesto to the skillet and toss with the cauliflower.

6. Add cooked chicken or fish on top of the cauliflower rice, cover and heat.
7. Let it sit for 5 minutes before serving.
8. Cover the chicken or fish with organic lemon slices.

6. Sever over cooked or raw vegetables.
