Most Middle Eastern tables will have an eggplant dip. Adding tofu, adds protein.

(Arabic) الباذنجان التوفو تراجع
/albadhinajan alttawffu tarajue/
makes 2 cups (400 g)

1 medium organic eggplant, cut into 1/2-inch (125 mm) cubes
1/2 cup (100 g) organic tofu
1/4 cup (60 ml) tahini
2 Tbs. (30 ml) organic lemon juice
2 Tbs. (30 g) toasted sesame seeds
2 Tbs. minced garlic
pinch or two cumin
1 Tbs. (4,5 g) parsley

1. Mix all the ingredients together.
