Mojo is a Cuban garlic-citrus sauce to marinade meats, chicken, and fish or cooked with vegetables as well as a side dish.


Mojo Para Carnes Crudas
(Mojo Marinade for Raw Meat)
Makes almost 2 cups (480 ml)

6 sliced or minced garlic cloves
¾ cup (180 ml) olive oil
1 cup (240 ml) sour or bitter orange juice (substitute: ⅔ cup /160 ml organic juice + ⅓ cup/80 ml organic juice)
1 tsp. (5 ml) oregano
½ tsp. (2,5 ml) cumin
1 bay leaf
black pepper to taste

1. Press garlic and pepper together.
2. Heat the oil over medium heat. Add garlic mixture and cook 2-3 minutes.
3. Add the citrus juice and remove from the heat.
4. Add the oregano, cumin, and bay leaf.
5. Store or use immediately.
6. Marinate meat, chicken, or fish. Cover and refrigerate 2-3 hours.


Mojo Para Viandas y Carnes Cocidas
(Mojo Sauce for Root Vegetables and Cooked Meats)
Makes 2 cups (480 ml)

6 sliced or minced garlic cloves
1 ½ cups (360 ml) olive oil
½ cups (120 ml) sour or bitter orange juice (substitute: ⅓ cup/80 ml organic lemon juice + 2 Tbs. and 2 tsp./40 ml organic orange juice)
black pepper to taste

1. Press garlic and pepper together.
2. Heat oil over medium heat. Add garlic mixture and cook 2-3 minutes.
3. Add the citrus juice and remove from the heat.
4. Serve immediately as a side dish or pour over food.
