Carrots are high in beta-carotene, an antioxidant that can protect skin cells from UV damages. Sweet potatoes, winter squash, mango, and dark greens are other good sources. Here are some ways to enjoy organic
- Use a vegetable peeler to make long ribbons from carrots, then toss with olive oil, balsamic vinegar, and pistachios.
- Stem carrots and purée with cook organic white beans and garlic for an easy appetizer dip.
- Grate carrots and add to pancake batter, along with cinnamon, cardamom, and nutmeg.
- Do not forget to chop the leafy greens and use them in a salad; combine with olive oil, organic lemon juice, and garlic in a blender and purée about 30 seconds for a salad dressing; make a carrot top pesto with garlic and organic: lemon or lime juice and nuts.
