  • Use a vegetable peeler to make long ribbons from carrots, then toss with olive oil, balsamic vinegar, and pistachios.
  • Stem carrots and purée with cook organic white beans and garlic for an easy appetizer dip.
  • Grate carrots and add to pancake batter, along with cinnamon, cardamom, and nutmeg.
  • Do not forget to chop the leafy greens and use them in a salad; combine with olive oil, organic lemon juice, and garlic in a blender and purée about 30 seconds for a salad dressing; make a carrot top pesto with garlic and organic: lemon or lime juice and nuts.
