Cookies for breakfast?! Sure, why not? You can even have them for a snack.
Preheat the oven to 325F (165C)
2 ripe organic bananas, mashed
2 1/2 cups (300 g) old-fashioned whole organic rolled oats
1 cup (200 g) organic almond butter
1/2 cup (100 g) organic each: honey, sliced almonds, and dried cranberries or other dried berries
1/2 tsp. (2,5 g) each: ground cinnamon and vanilla extract
1/4 tsp. (1,25 g) sea salt
1. Line a baking sheet with parchment paper.
2. In a bowl, mix all the ingredients.
3. Scoop 1/4-cup (50 g) mounds of the batter onto the parchment paper.
4. Bake for 17-20 minutes, until lightly browned on the sides.
5. Remove and allow to cool on a baking sheet for 5 minutes before transferring to a wire rack to cool completely.
6. They will stay fresh in an airtight container for up to a week.
