This recipe used mashed potatoes and fava beans, but lima beans make a good substitute. It works well with other vegetables: Swiss chard, spinach, string beans, or whatever you have, for example.
Purea di Patate e... (Italian)
Serves 6

2 pounds (455 g) each organic: peeled potatoes and fave beans (fresh or frozen)
2 crushed organic garlic cloves 
2 bay leaves
1/3 cup (80 ml) olive oil
1/2 cup (65 g) (dairy-free) cheese, Grana Padano or Parmiginato-Reggiano

1. Put the potatoes, garlic, and bay leaves in a pot with water to cover.
2. Bring to a simmer, cook until the potatoes are just beginning to be tender, 10-12 minutes or more depending on the size.
3. Add the fava beans, cook until both are tender, about 8-10 minutes.
4. Drain.
5. Remove the bay leaves.
6. Over a low heat, mash the potatoes and beans with the oil.
7. Turn off the heat, stir in the cheese.
8. Serve with a little olive oil on top.
