Add flavor to fish, pork chops, or vegetables.
Makes about 1/2 cup (120 ml)
1 medium organic shallot, minced (=about 3 Tbs./45 g)
1 cup (240 ml) organic chicken broth
1/4 cup (60 ml) organic juice from 2 lemons
2 Tbs. (30 g) drained capers
3 Tbs. (45 ml) (dairy-free) organic butter
1. Cook the fish, port chops, or vegetables.
2. Remove and add the shallot, cook over medium heath about 30 seconds.
3. Increase the heat to high and stir in the broth, scraping up any browned bits.
4. Add the lemon juice and capers.
5. Bring to a simmer and cook until the sauce measure 1/3 cup (80 ml), 3-4 minutes.
6. Remove from the heat and whisk in the butter.
7. Serve with the dish.
Capers are flower buds of the caper bush,
also called Flinder Rose
from the Mediterranean region and parts of Asia.
