As a side dish, these onions can be cooked with more cinnamon and sugar to taste.

Serves 4

Preheat the oven to 325F (160C)
1 1/2 pounds (675 g) organic red onions, finely sliced
6 Tbs. (90 ml) olive oil
pinch or two of saffron
1/2 tsp. (2,5 ml) ground ginger
1 tsp. (5 ml) [or more] each ground: black pepper and cinnamon
1 Tbs. (15 ml) [or more] organic sugar
-Morrocan numbers-
وا حد /wa'ed/ ١. Spread the onions into a shallow dish.
جوج /jouj/ ٢. Mix the oil, saffron, ginger, pepper, cinnamon, and sugar and pour over the onions. Marinate for 2 hours.
تلاتة /telata/ ٣. Pour the onion mixture into an ovenproof dish.
ربعة /reb'a/ ٤. Fold a piece of foil into three and place over the top of the dish. Cover.
خمسة /khemsa/ ٥. Bake for 45 minutes.
سْتة /setta/ ٦ . Increase the temperature to 400F (200C), remove the lid and foil.
سْبعة /seb'a/ ٧. Bake another 5-10 minutes until the onions are lightly glazed.
تْمنية /timenya/ ٨. Serve with meat or other vegetables.
