Compound butter is great on baked goods (muffins, scones); on pancakes, waffles; on meat, chicken fish, and vegetable; or sliced pieces of bread for appetizers. Here are some examples...


(Use organic ingredients and if needed, gluten- and dairy-free.)

I. orange zest + rosemary + butter + sourdough bread

II. lemon zest+ dill + butter + grain bread

III. lime juice + basil + butter bagel/baguette/Artisan bread

IV. lemon juice + parsley + herbs: basil, oregano, rosemary, black pepper + fresh bread

V. olive oil + herbs: chives, thyme, sage, rosemary fresh bread

VI. rosemary + paprika + butter  cooked steak, chicken, or fish

VII. jalapeño pepper + lime juice + butter grilled meat, chicken, fish, shrimp, or vegetables

VIII. honey + orange zest + butter toast, cornbread, scones, baked sweet potatoes


1. Chop and mash together the ingredients.
2. Spoon the butter onto a piece of parchment paper or plastic wrap.
3. Form into a log and wrap well.
4. Chill for at least three hours before using.
