Oats are very healthy, great antioxidants & gluten free + peanut butter is rich in nutrients and protein + no baking...what not to like about this dessert?
Makes 3 dozen
1 1/2 cups (195 g) organic sugar
1/2 cup (65 g) organic (dairy-free) milk
6 Tbs. (120 g) organic (dairy-free) butter
1 tsp. (5 ml) vanilla extract
2 1/2 cups (325 g) uncooked quick-cooking organic oats
2/4 cup (95 g) organic dry-roasted peanuts
2/3 cup (95 g) organic peanut butter
1/4 cup (30 g) sweetened cocoa
1. Stir together: sugar, milk, butter, and vanilla extract in a saucepan.
2. Bring to a boil over medium-high heat, cook a minute. Keep stirring.
3. Remove and stir in the oats, peanuts, peanut butter and coca.
4. While still warm, use a 1-tablespoon to scoop cooky batter onto a baking sheet lined with parchment paper.
5. Let it cook at room temperature for about 15 minutes.
6. Store in an airtight container at room temperature for up to a week.
