A good breakfast or snake made of fruit, nuts, and oats hit the spot.

Makes 9 servings
Preheat the oven to 350F (175C)

(dairy-free) organic butter for greasing
3 cups (390 g) organic rolled oats (which are gluten-free)
1/3 cup (95 g) organic brown sugar, packed
2 tsp. (10 g) baking powder
1 tsp. (5 g) cinnamon
1 1/2 cups (360 ml) (dairy-free) milk
2 organic eggs
1/4 cup (30 g) melted, (dairy-free) organic butter
1 tsp. (5 ml) vanilla
1 organic apple, cored, peeled and chopped
1/4 cup (30 g) chopped, organic nuts (pecans, walnuts, or your choice)

optional: sliced apples on the plate

1. Combine the oats, sugar, baking powder, and cinnamon in a bowl.
2. In a different bowl, combine the milk, eggs, melted butter and vanilla.
3. Mix the wet and dry ingredients together.
4. Stir in the chopped apple and nuts.
5. Pour the mixture into the greased baking pan.
6. Cook about 30 minutes.
7. Remove and serve warm.
