Caprese pasta is a flavorful dish from the island of Capri, Italy. The island has been occupied by Greeks, Romans, French, and English. Hence, each left a bit of their culinary touches to the local dishes, as well as each cook added this and that to the recipes. 

Classic caprese has all local ripe tomatoes promodori matui , fresh buffalo mozzarella mozzarella di bufala, sweet basil basilica dolce , and olive oil olio d'oliva. It is usually a raw salad Insulate Caprese. Use pasta for a warm dish. Chicken is that "other" this and that.

Pasta Caprese con pollo (Italian)
Serves 4
Preheat the oven to 375ºF / 185ºC

1 1/2 pounds (680 g) organic boneless chicken breast
Italian seasoning
organic cherry tomatoes, cut in half 
2 Tbs. (30 ml) each: olive oil and balsamic vinegar
thyme, red chili flakes, and black pepper, to taste
(gluten free) spaghetti, orecchiette, chickpea or lentil penne, rotini, or fusilli pasta
minced organic garlic
diced organic shallots
organic bocconcini
mozzarella pearls (bite-size balls)
Kalamata olive
garnish with chopped basil

~Neapolita~ (napulitano) is the primary language spoken on the island.
uno 1. Line a backing sheet with parchment paper.

duje 2. Sprinkle the chicken with Italian seasoning.

tre 3. Bake for 25 minutes, inside temperature 165ºF / 75ºC.

quatto 4. Thinly slice the cooked chicken.

cinco 5. Toss tomatoes with olive oil and thyme.

seje 6. Spread the mixture on the baking sheet, bake for about 15 minutes.

sette 7. Cook the pastas as directed on the box, drain and rinse.

otto 8. Whisk together: olive oil, balsamic vinegar, garlic, chili flakes, shallots, and black pepper.

nove 9. Serve in bowls: pasta and drizzle the dressing.

diece 10. Add the slice chicken, tomatoes, bocconcini, cheese, and olives. Toss.

únnere 11. Garnish with basil.

olive oil
4 organic chicken breasts, pat dry and seasons with salt and pepper
4 springs of thyme + 4 Tbs. (36 g) picked leaves
1 cup (130 g) diced organic onions
4 Tbs. (60 ml) organic lemon juice
4 tsp. (20 g) organic sliced lemons
1 cup (240 ml) organic chicken broth
organic spinach
1 jar artichoke hearts, rinse and drain
slice cheery tomates
(dairy-free) yogurt


ένα / EN-a/ 1. Heat a skillet on medium, add the oil.


δύο /THEE-oh/ 2. Cook the chicken for 5 minutes on each side. Remove from the pan.


τρία /TREE-a/ 3. Add the thyme springs and onions to the skillet. Sauté for 3-5 minutes.


τέσσερα /TESS-air-uh/ 4. Add lemon juice. Scrap the bottom of the skillet with a wooden spoon.


πέντε /PEN-day/ 5. Stir in the chicken broth.


έξι /EX-ee/ 6. Add the chicken breast, top with the spinach, cover, cook for 2 minutes.


εφτά /EF-TA/ 7. Remove the lid. Add the cheery tomatoes and acrihoke heart pieces. Cook until the sauce has reduced a little, about 4 minutes.


oκτώ /oc-TOH/ 8. Whisk in the yogurt.


εννιά /en-NAY/ 9. Remove the chicken when the inside temperature is 165ºF/74ºC.


δέκα /THEK-a/ 10. Plate the chicken, top with the spinach and artichokes.


έντεκα /éndeka/ 11. Garnish with sliced lemons and thyme leaves.

 A tasty chicken dish which is quick and easy to prepare.
Serves 3

3 organic chicken breast
(gluten-free) flour
salt and pepper to taste
1 Tbs. (15 ml) each soy sauce or gluten-free liquid aminos and red wine vinegar
3 chopped organic cloves of garlic
2 Tbs. (30 ml) organic, (dairy-free) butter
1/3 cup (80 ml) organic honey
chopped organic chives

1. Slice small cuts diagonally across the chicken breast, turn over, and repeat.
2. Rub salt and pepper on the chicken, on both sides.
3. Pour some flour on a plate and cover both sides of the chicken.
4. Melt 1 Tbs. (15 ml) butter in a frying pan.
5. Brown the chicken on both sides.
6. In the middle, of the three pieces of chicken, add the rest of the butter, soy sauce/liquid aminos, vinegar, garlic, and honey. Stir the pieces of chicken around the sauce. Turn over and repeat.
7. Cook until inside temperature of the chicken is 165F/74C.
8. Remove, plate the chicken, pour some sauce over them, and add chopped chives.

 Quick and easily fried chicken in a savory sauce....
Serves 4

4 organic chicken breast
(GF) flour
(DF) organic butter
organic chopped garlic
1-2 Tbs. (15-30 ml) each: soy sauce or (GF) liquid aminos, organic honey, and vinegar (adjust to taste)
herbs that go well with chicken: (use as desire)
  • cilantro
  • rosemary
  • sage
  • oregano
  • thyme
  • marjroam
  • tarragon
  • lemon pepper
Asian herbs for chicken:
  • turmeric
  • five-spice
  • cardamom
  • fenugreek
  • cloves
  • nutmeg
  • cumin
  • ginger powder
  • ground Sichuan peppercorns
  • ground magao (aka mountain peppercorn, a Taiwanese spice)
  • shichimi togarashi  七味唐辛子 (Japanese 7-spice blend)

 . Cut across the the chicken breast with slices of Xs.
. Bread the chicken in the flour.
. Add butter to a skillet.
 . Fry the chicken to a temperature just below 165F/74C.
. Pour the rest of the ingredients except the herbs into the skillet.
. Cook for a few minutes, to reach 165F/74C.
. Serve with the sauce over the top of the chicken.
  (a) It can be thicken with some (GF) flour if you like.
. Sprinkle with herb(s) of your choice.
