A tasty Hawaiian dish!
ʻOki puaʻa me ka paina (Hawaiian)
Serves 4
Serve with organic rice.
4 organic, thick pork chops
2 cans of organic, sliced pineapple, save the juices
1/2 cup (65 g) corn starch
3 Tbs. (30 ml) soy sauce or gluten-free liquid aminos
3 Tbs. (30 ml) rice wine vinegar
organic garlic
3 Tbs. (30 g) organic: honey or sugar
1 Tbs. (15 ml) organic ketchup
ʻekahi 1. Place a single layer of pineapple slices on the bottom of slow cooker.
ʻelua 2. Add the pork chops in a single layer.
ʻekolu 3. Add another layer of pineapple
ʻehā 4. Pour in the pineapple juice.
ʻelima 5. Add the corn starch, soy sauce/liquid aminos, honey/sugar, garlic, ketchup, and rice wine vinegar.
ʻeono 6. Cook on HIGH about 4 hours. (meat temperature 145F/63C).

If you do not use barbecue sauce very often, just make your own.
Makes about 1 1/2 cups (360 ml)
1 cup (225 g) organic tomato ketchup
juice of 1/2 organic lemon
1 Tbs. (15 ml) balsamic vinegar or white wine vinegar
2 chopped organic garlic cloves
1-2 Tbs. (30-45 g) Dijon mustard
1/2 cup (120 ml) olive oil
black pepper to taste
1. Mix all the ingredients together.
2. Refrigerate until ready to use.

Add BBQ sauces:
Use organic if possible.
- chicken pizza (as a sauce)
- nachos (with cheese, pulled pork, pickled peppers)
- salad dressing (whisk with lemon juice and olive oil)
- dip (jalapeño, mozzarella sticks; by itself or mix with sour cream and yogurt)
- chicken sandwiches or tacos
- toasted buns or tortillas (with tofu, roasted carrots, or sweet potatoes)
- hot dogs
- potato salad (red potatoes, jalapeños, cilantro, cheese)
- cocktails sauce (with Worcestershire, horseradish, vinegar, squeeze of lemon)
- cornbread muffins icing
- chicken, beef, port, fish...
- etc.
A. ketchup, light brown sugar, white wine vinegar, Worcestershire sauce, and paprika
B. vinegar, tomato paste, or mayonnaise (or a combination), onion powder, spices such as mustard and black pepper, and sweeteners such as sugar or molasses.
C. Very good!
1 tsp. (2 g) cumin seed
2 Tbs. (18 g) fennel seeds
5 organic garlic cloves
black pepper
1. Grind all together.

rosemary sprigs
1 organic zest and juice of orange
1 organic garlic bulb, broken into cloves and peeled
4 tsp. (8 g) paprika
6 tsp. (30 ml) balsamic vinegar
1/2 cup (120 ml) organic ketchup
1/2 cup (120 ml) olive oil
10 bay leaves
