Sweet potatoes were grown in Polynesia and spread by vine cuttings instead of by seeds. They have been found in the Cook Islands as early as 1210 CE. The Polynesians spread them to Easter Island, Hawai'i and New Zealand by 1400 CE. They are now grown around the world.

If you grow them, their leaves are edible, prepared like spinach or turnip greens.

Serves 2
Preheat the oven to 400ºF (200ºC)

2 large organic sweet potatoes, washed and slice into thin rounds
2 Tbs. (30 ml) olive oil 
ground cinnamon
crumbled feta cheese or dairy-free goat cheese
organic honey 
chopped parsley 
chopped organic walnuts or pecans

tasi 1. Line a baking sheet with parchment paper and drizzle if olive oil.


rua /ru-a/2. Place the sweet potato round on the baking sheet, drizzle with oil and cinnamon. 


tolu 3. Roast for about 10-15 minutes on both sides.


 fa 4. Remove them from the oven and top each with a cheese and drizzle of honey.


rima 5. Garnish with parsley and nuts.


ono /o-no/ 6. Serve as side dish  or as a snack.

 Fresh mashed pumpkin can be used or canned purée, which is faster.


Serve 4
Preheat the oven to 350F (175C)

2 cloves of organic garlic
2 organic eggs
1/3 cup (80 ml) organic heavy cream
1 1/4 cups (280 ml) pumpkin purée
4 Tbs. (60 ml) organic ricotta cheese
1 Tbs. (30 g) Parmesan cheese
1/2 - 1 tsp. (2,5 - 5 ml) dried: rosemary, sage, and thyme
chopped organic pecans

optional: 
  • an organic sweet potato (Microwave for 15 minutes. Cool and mash.)
  • little organic brown sugar

A. If using a fresh pumpkin: 
1. Bake in the oven for 2 hours.
2. Cut and scoop out the pulp and seeds. 
3. Mash with or without the seeds.
4. Continue with B1


B. If using purée pumpkin:
1. Whisk the garlic, eggs, creams, and optional brown sugar together.
2. Whisk in the pumpkin purée and optionals mashed sweet potato.
3. Spread into a casserole dish.
4. Spoon the ricotta cheese over the pumpkin mixture.
5. Spread the Parmesan cheese and sprinkle the spices.
6. Top with withe the pecans
7. Bake for 25-30 minutes.
Sweet potato young shoots and leaves can be eaten as greens but not in this recipe. Sweet potatoes are only distantly related to the common potato! 

Yams are different vegetables, native to West Africa, South America and the Caribbean, Asia, and Oceania. While the sweet potato is native to tropical regions of the Americas, which include Hawai'i and Florida.


Serves 6

1 1/2 pounds (680 g) organic chicken thighs, cut into 1 1/2-inch (3,70 cm) pieces
2 organic sweet potatoes, cut into 1 1/2-inch pieces
1 can (14.5 ounces/625 g) organic stewed tomatoes, with the juice
1 chopped organic onion
3 minced garlic cloves or 3/4 tsp. (12 g) granulated garlic
1-inch (2,5 cm) chopped ginger or 1 1/4 tsp. (175 g) ginger
1/8-1/4 tsp. (18 g - 35 g) cayenne pepper or more to taste
2 1/2 cups (600 ml) organic chicken broth
1/4 cup (30 g) (dairy free) butter
1 brunch of organic spinach
organic toasted chopped almonds
chopped cilantro or parsley
2-3 spoonful of organic peanut butter


1. Add to the slower cooker: the chicken, sweet potatoes, tomatoes, onions, garlic, ginger, and cayenne pepper.
2. Add the broth, mix, cover and cook on low for 6-7 hours or on high for 3 hours.
3. If on low, switch to high. Use a ladle to remove 1/2 cup (120 ml) of the liquid. Set aside.
4. Stir in the spinach, cover and cook 15 minutes more.
5. Whisk the butter and peanut butter into the cooked liquid.
6. Stir it into the stew.
7. Serve with sprinkled almonds and cilantro/parsley.



Sweet potatoes are a good source of fiber and full of vitamins and nutrients, then add high protein beans, some Indian spices, and a healthy dinner is on the table!


भरवां शकरकंद (Hindi)
/bharavaan shakarakand/
Serves 4
Preheat the oven to 375F (190C)

2 organic sweet potatoes, cut in half, lengthwise 
2 Tbs. (30 ml) olive oil
1-2 tsp. (2-4 g) each: cumin, mustard seeds, paprika, turmeric, ginger, garam masala, and coriander 
1 diced organic each: garlic clove and onion
14 ounce (400 g) organic black beans, mix beans, or lentils (drained and rinsed)
(dairy-free) yogurt
1/2 cup (65 g) chopped cilantro or parsley
1/4 cup (30 g) chopped mint
red pepper flakes to taste for garerous

एक /ek/ 1. Line a backing sheet with parchment paper.


दो /do/ 2. Rub the sides of the cut sweet potatoes with oil.


तीन /teen/ 3. Place cut side down on the baking sheet and bake for 35-45 minutes. Afterwards, set aside to cool


चार /char/ 4. Heat the oil over medium heat and sauté the cumin and mustard seeds in a frying pan.


पांच /panch/ 5. Add onions, paprika, coriander, turmeric, a nd garlic. Sauté until the onions are soft.

 (a) Add a little water if needed to prevent sticking and burning.


: /chay/ 6. Remove from the heat and stir in the beans. Set aside until the potatoes are done.


सात /sāth/ 7. When potatoes are cool enough to handle, scoop out the middle , leaving a bit to support a firm shell.


आठ /āt/ 8. Add scooped potato to the onion and beans mixture.


नौ /nao/ 9. Turn up the heat and cook for a couple of minutes, until hot.


दस /das/ 10. Add the mixture to the potato shells.


ग्यारह /gyārah/ 11. Top with yogurt, chopped cilantro/parsley, mint and red pepper flakes. 

 Nice combination for dinner or a holiday side-dish.
Serves 8
Pre-heat the oven to 325F (165C)

2 Tbs. (30 ml) organic (dairy-free) butter
2 minced organic garlic cloves
3 Tbs. (90 g) (gluten-free) flour
1 1/2 cups (360 ml) coconut milk
1 Tbs. (15 ml) chopped basil or 1 tsp. (5 ml) dried basil
1/2 tsp. (2,5 ml) Chinese five-spice powder or 1/4 (1,25 ml) ground cinnamon or nutmeg
3 pounds (1365 g) (=5-6) organic sweet potatoes, peeled and thinly sliced
1/2 cup (65 g) organic each: brown sugar and peanut butter
optional: organic peanuts and/or basil

1. Grease the bottom and sides of a oven pan
2. Line with parchment paper, allowing ends to extend above the edges.

A. Sauce:
1. Melt the butter over medium heat.
2. Add garlic, cook a minute.
3. Whisk in the flour.
4. Continue whisking while adding the coconut milk, until thickened and bubbly.
5. Stir in the basil, five-spice power, some black pepper. Then remove from the heat.

B. Peanut sauce:
1. Mix well the sugar and peanut butter.

C. Sweet potatoes:
1. Arrange in the pan, overlapping slices. Lay about 4-5 times.
2. Spoon some sauce over each layer, about 1/4 cup (60 ml). Save some for the top layer. 
3. Spread the peanut butter mixture on top.
4. Add the rest of the sauce.

D. Bake:
1. Bake uncover about an hour, until bubbly and golden and potatoes are tender.
2. Remove from the oven and let it sit about 30 minutes.
3. Remove sides of the pan and peel away the paper.

E. Serve:
1. Slice into wedges and top with optional peanuts and/or basil



 It is like Middle Eastern "shakshuka" breakfast but with a Latin flavors. 

Huevos fritos a la mexicana (Spanish)
Serves 4-6
Preheat the oven to 350F (175C)

olive oil
Mexican chorizo, crumbled
organic sweet potatoes, peeled and cut into 1/2-inch (12 mm) cubes
ground cumin, cayenne, and black pepper
diced organic onion
1/4 cup (180 ml) water
sliced organic bell pepper
5-6 organic eggs
plus:
  • red pepper flakes
  • sliced jalapeño
  • queso fresco or other type of cheese or a dairy-free cheese
  • salsa
optional: 
  • diced organic tomatoes with juice
  • diced green chiles
organic (gluten-free) tortillas of your choice
organic black beens, rinsed and drained as side dish
garnish: cilantro or parsley

uno 1. Heat the oil in a skillet over medium heat.


dos 2. Stir in the chorizo and cook 5-7 minutes.


tres 3. Push the chorizo to the side of the skillet and add the sweat potatoes and any spices to taste.


cuatro 4. Cook another 5-7 minutes while mixing with the chorizo.


cinco 5. Stir in the chopped onions, bell pepper, optional ingredients, and water. Cook about 5 minutes.


seis 6. Remove from the heat.


siete 7. Make 5-6 wells in the mixture with back of a spoon.


ocho 8. Crack an egg into each well.


nueve 9. Bake until the eggs are cooked as you like them, 13-15 minutes.


diez 10. Let cool for a few minutes.


once 11. Sprinkle with the cilantro/parsley, red pepper flakes.


doce 12. Serve in the skillet on the table with side blows of: jalapeños, black peans, cheese, salsa, and plate of tortillas.

 


This seems like an odd pâté, but it is "very" fall/winter appetizer.

Serve 4

1 organic diced onion
1 organic sweet potato cut into 1-inch (2,5 cm) cubes
1 cup (130 g) organic butternut squash, cut into 1-inch cubes
soy sauce or gluten-free liquid aminos
3 Tbs. (45 ml) tahini
2 tsp. (10 g) organic honey

1. Heart a dry skillet over medium heat.
2. Add 1 Tbs. (15 ml) of water.
3. Sauté onions about 5 minutes.
4. Add sweet potato, squash, a little soy/liquid aminos and water. Bring to a boil.
5. Cover, reduce heat, and simmer about 25 minutes.
6. Season with a little more soy/liquid aminos. Simmer uncovered until the liquid is absorbed.
7. Place the vegetables in a food processor.
8. Add the tahini and honey. Processor until smooth. (Add a little water if it is needed.)
9. Serve with (gluten-free) bread and/or crackers.
When sweet potatoes are baked, they are have a higher content of vitamin C. Add cheese and eggs and you have a nutritional  breakfast!

📌Sweet potato originated between the Yucatán Peninsula, Mexico and the mouth of the Orinoco River, Venezuela about 5 000 years ago. By 2500 BCE,  it had spread to the Caribbean and rest of  South America

Serves 4

organic sweet potatoes (dark orange flesh has higher vitamin A)
1 Tbs. (15 ml) olive oil
(dairy-free) butter
2 tsp. (10 ml) vinegar
organic eggs
(dairy-free) hard cheese
parsley
black pepper
chiles to taste

1. Peel and cut the sweep potatoes in bite size pieces.
2. Place half the sweep potatoes in a pan of salted water and bring to boil.
3. Cook about 10 minutes.
4. Heat oil with a little butter in a skillet over medium heat.
5. Add the rest of the sweet potatoes and fry for 8-10 minutes, toss, until golden brown.
6. Drain the boiled potatoes and mash them.
7. Add to the skilled and season with black pepper to taste. Cook a few minutes.
8. Remove from the heat and keep warm.
9. Bring water with the vinegar to a boil.
10. Reduce to a simmer.
11. Poach the eggs for 3-4 minutes.
12. Plate with the potatoes and poached egg on top.
13. Add crumble cheese and sprinkle with parsley and chiles.


🔖Side notes: 
1. Sweet potato leaves are edible and can be prepared like spinach or turnip greens.
2. If white "roots" form on an old sweep potato, it is not edible. But you insert three toothpicks, set in a jar of water, and vines will form. Repot in soil and have a nice plant.
3. If anyone still has an aquarium, sweet potato vines make a nice trailing out of the water with its roots submerged. Plus it removes waste product of aquatic life, which improves the living conditions for fish. 
4. Grow your own: Plant in full sun 3-4 weeks after the last frost, mature in 90-170 days. Make holes 6 inches (15 cm) deep and 12 inches (30 cm) apart. Bury slips up to the top leaves, press the soil down gently, water well.

Lasagne di patate dolci e cavolfiore (Italian)
Serves 4-6
Preheat the oven to 425F (220C)

(gluten-free) lasagna noodle
2 pounds (910 g) organic sweet potatoes, peeled and cubed
minced organic garlic cloves
black pepper
1 cup (240 ml) organic vegetable broth
2 cups (260 g) shredded mozzarella or dairy-free goat cheese
1 cup (130 g) organic cauliflower rice*
2 Tbs. (30 g) sea salt
organic tomato sauce
fresh organic spinach
chopped parsley
olives cut in half

uno 1. Soak the noodles in hot water for 30 minutes.

due 2. Put the sweet potatoes in a large pot and cover with 1 inch (2,55 cm) salt water. Bring to a boil, cook about 15 minutes.

tre 3. Mash the potatoes with garlic, pepper and broth.

quattro 4. Add half the cheese and cauliflower rice.

cinque /CHEEN-kweh/ 5. Pour 1/2 the tomato sauce into a baking pan.

sei /SEH-ee/ 6. Spoon the mashed sweet potatoes into a piping bag (or use a zip-close bag) and cut the tip, or spread spread it on.

sette 7. Put a layer of noodles.

otto 8. A layer of potatoes.

nove 9. Top with spinach and then more sauce.

dieci /dee-EH-chee/ 10. Repeat.

undici 11. Finish with the remaining sauce and more cheese.

dodici 12. Top with olives and parsley.

tredici 13. Bake for 25 minutes


*Cauliflower Rice
Makes 4 cups (520 g)
a large organic cauliflower head

1. Wash and dry. Remove all greens.
2. Press on a towel to remove any excess moisture, so it will not be soggy.
3. Cut into small pieces and gate in a food processor, into "rice".

4. Use the extra in:
  • stir fry
  • sauté over medium heat in 1 Tbs. (15 ml) olive oil, cover steam about 5-8 minutes, season with soy sauce/(gluten-free liquid aminos)
  • burrito bowl
  • backed cheesy cauliflower rice and broccoli 
  • stuffed peppers
  • etc.
5. Store uncooked cauliflower rice in the freezer up to a month or refrigerated up to 5 days.

 So, I bought eight pounds (3,6 kg) of ground turkey! It was on sale. It has been in the freezer for a very long time, because I do not know what to make with it. The weather is cold, rainy, and chili sounds good....Here is what I did with 1 pound (455 g). Chile de Turquía (Spanish)
Serves 4

Add more or less spices to taste.
1 Tbs. (15 ml) olive oil
1 each organic diced: onion, carrot, celery, and bell pepper
1 organic small organic sweet potato, peeled and cubed
1 pound (455 g) organic ground turkey
1 cup (240 ml) water
1/2 can (7 ounces/200 g) each organic: tomato sauce, diced tomatoes with the juice, and black beans or kidney beans
1-2 Tbs. (15-30 g) ground chili powder 
1 1/2 tsp. (8,5 g) each: cumin, paprika, black pepper, and cayenne pepper
pinch of red pepper flakes

optional toppings:
  • sliced organic avocado
  • thinly sliced jalapeño
  • shredded (dairy-free) cheese
  • (dairy-free) yogurt
  • chopped cilantro and/or parsley

  • uno 1. Heat oil in a soup pot over medium heat.

  • dos 2.  Sauté garlic, onions, bell peppers, carrots, celery, and sweet potato for 5-7 minutes, until soft.

  • tres 3. Add the turkey and cook until brown, about 5-7 minutes, stir and break up the chunks.

  • cuatro 4. Add water, tomato sauce, diced tomatoes with the juice, beans, and the spices.

  • cinco 5. Bring to a boil, then reduce to a bubble. Cook uncovered until the chili thickens, about 45 minutes. Stir. 
  •  (a) If you do not what it to "bubble", turn down to simmer and cook for 3 hours.
  •  (b) If it becomes to thick, add a little water.

  • seis 6. Taste and add more seasonings if you like.

  • siete 7. Serve hot with any of the toppings.

  • ocho 8. Leftovers will keep up to a week in the refrigerator or freeze for 3 months.

Quinoa is a gluten-free flowering plant. It was used to feed livestock 5-7 thousand years ago and for humans 3-4 thousand years ago in the Lake Titicaca basin of Peru and Bolivia.

Ensalada de quinua y camote (Spanish)
Serves 4
Preheat the over to 350F (175C)


Use organic ingredients.
1 cup (130 g) each: drained cranberries and rinsed red quinoa
1 cup (95 g) chopped parsley leaves (or 1/2 cup/48 g of dry parsley)
1/4 cup + 1 tsp. (75 ml) olive oil
1 3/4 cup (420 ml) water
3 Tbs. (45 ml) apple cider vinegar
2 Tbs. (30 ml) honey
pinch or two of black pepper
1 large sweet potato, peeled, cut into bite-size cubes
1/4 tsp. (60 g) each: paprika and sumac
1/2 tsp. (120 g) each: granulated garlic and slivered almonds
4 chopped scallions

uno 1. Place 1 tsp. (5 ml) olive oil and quinoa in a small pot over medium-high heat. Stir about 1 minute.

dos 2. Add water and bring to a boil.

tres 3. Reduce the heat to low, cover, and simmer for about 15 minutes, until it is tender.

cuatro 4. Pour cooked quinoa into a fine mesh strainer and allow excess liquid to drain out.

cinco 5. Add vinegar, honey, and pepper the drained quinoa. Mix.

seis 6. Line two baking sheets with parchment paper.

siete 7. Place the sweat potato, 2 Tbs. (30 ml) olive oil, paprika, sumac, and garlic onto one baking sheet. Mix.

ocho 8. Bake 35 minutes, until the edges being to char slightly. 

neuve 9. Remove from the oven with spatula.

diez 10. Place the almonds on the other baking sheet and bake 10-12 minutes until lightly golden in color.

once 11. In a bowl, add cooled almonds, quinoa, sweet potatoes, almonds, cranberries, scallions, and parsley. Mix together.

doce 12. Serve cold.

 An inexpensive and great texture meal...
Serves 4
4 cloves of garlic, peeled and crushed
1-inch (2,5 cm) piece of ginger, peeled and grated
1 Tbs. (15 ml) olive oil
1 cup (130 g) organic green lentils, rinsed
1 large butternut squash, eggplant, or sweet potatoes (about 2 pounds/910 g), peeled and cut into bite-size pieces
2 Tbs. (25 g) each ground: cumin, turmeric, and organic tomato paste
2 cups (5 dl) boiled water
cooked organic brown rice

1. Fry a few minutes: crushed garlic and grated ginger in olive oil.
2. Add the lentils and cover with the boiling water. Let the pan start to simmer.
3. Add the vegetable pieces to the lentils with the cumin, turmeric, and tomato paste.
4. Put the lid on and leave to simmer for about 40 minutes, until the lentils and vegetable are soft. (You might need to add a little more water.)
5. Serve with brown rice.
