Garbanzo Bean and Sun-Dried Tomato
Dip.
Ingredients
1/2 cup (120 ml) sun-dried tomatoes, chopped
1 cup (240 ml) organic chickpeas (garbanzo beans)
4 Tbs. (60 ml) olive oil
1/4 cup (60 ml) basil or mint
4 garlic cloves, chopped
1/2 tsp. (2,50 ml) oregano
1 tsp. (5 ml) teff flour (for added protein)
optional: splash of lime juice
Directions
Take chickpeas (garbanzo) beans, sun-dried tomatoes and olive oil place in a food processor. Blend until smooth. Add spices, teff and 1 Tbsp of lime juice. Blend until smooth. Remove and place in a bowl.
Enjoy!
Use as a dip or spread for: vegetables, chip*; on open-face sandwiches* or base of bruschetta*.
