I wanted to marinate organic boneless chicken breast with something different. There was still a container of almond-coconut yogurt, added some oregano, whisked them together. Marinate the chicken in the refrigerator for 30 minutes.-Mike
Serves 2-4
1. Tenderize by pounding the chicken whole or split the pieces if they are thick.
2. Mariante.
3. In a pan with little olive oil or on a grill, brown the pieces about 10 minutes on each side. Cut into the chicken to make sure it is not a pink color. Cook longer if needed.
4. Put some of the extra marinated yogurt on a plate, chicken on top, and a spoonful more yogurt over the top. Sprinkle with chopped parsley and garnish with sprig of parsley.
5. Serve with a nice salad and in our case, corn on the cob.
