Ginger is a hot spice; the younger ginger is juicy with a very mild taste.
姜鲑鱼 
/jiāng guīyú/
(Mandarin Chinese)
marinated 30 minutes

Need:
soy sauce (liquid aminos-dairy free)
rice vinegar
honey
toasted sesame oil
minced ginger to tastes
wild salmon fillets

1. Whisk the marinade ingredients together.
2. Add wild salmon*. Let it set for 20-30 minutes.
3. Grill or bake in the oven until fillets flake easily with a folk.
4. Serve with a mixed salad and a vegetable.

Keep ginger in the freezer to stay fresher and last longer.
