English, French, or Italian, this frittala (Italian: fried) is great for any meal or snack!
Frittata à la Funghi (Italian)
Serves 4
Preheat oven to 425F (220C)

2 Tbs. (30 ml) olive oil
10 ounces (280 g) mushrooms, cut into fourths
2 tsp. (10 ml) each fresh or dried: marjoram and thyme
2 scallions or small onion, thinly sliced
6-8 organic eggs
chopped nitrate-free ham
3 ounces (85 g) (dairy-free) goat cheese

1. Heat the oil in a cast-iron skillet over medium-high heat.
2. Cook the mushrooms until golden brown, about 5-6 minutes.
3. Add the thyme, marjoram, ham, and scallions/onions, cook and stir about 1-2 minutes.
4. In a large bowl, whisk the eggs with a few drops of water.
5. Pour the eggs into the pan of mushrooms and gently stir for a minute.
6. Drop goat cheese on top. 
7. Transfer the skillet to the oven and cook 8-10 minutes until the eggs set.
8. Serve with a salad.
