uncooked (gluten-free) penne pasta
olive oil
crushed red pepper
organic sliced garlic clove(s)
organic sliced tomatoes or grape tomatoes
1/2 cup (120 ml) organic vegetable broth
black pepper
pitted chopped olives
organic spinach
basil leaves
(dairy-free) grated cheese
1. Cook penne as directed on the package.
2. Sauté in a skillet over medium heat: red pepper and garlic 30 seconds.
3. Add the tomatoes, broth, black pepper, and olives for 6 minutes. Stir.
4. Add the pasta and 1/2 cup (120 ml) liquid from the pasta pan. Simmer 2 minutes.
5. Stir in the spinach and basil for 2 more minutes.
6. Serve with graded cheese on top.
