They are a rooted vegetable originated in southern Peru and northwest Bolivia about 7 000 to 10 000 years ago. It was not until the late 16th century when they were introduced to Europe. They are now an integral part of much of the world's food supply with nearly 4 000 varieties.

  • Starchy potato = Russet (aka Idaho potato), King Edward, sweet potato; best for baking and mashing; French fries
  • Waxy potato = red-skinned or new potatoes; for roasting or boiling; potato salad, casseroles, and soups
  • All-purpose = Yokon Gold, Golden Delight; grilling, roasting, pan frying; soups or gratins
  • White potato = boiling; casseroles, soups, and stews
  • Round potatoes (Irish potatoes) = has thinner skin than white potatoes; stews, soups, and casseroles
