Strognaoff means a dish of sautéed pieces of beef or a substitute served in a sauce with sour cream. Here, I use just mushrooms and no sour cream. The dish is named after the Russian family "Stroganovs" who were involved in the settlement of Siberia.

                                                                            serves 4

1/2 ounce (15 g) dried organic mushrooms, coarsely chopped 
olive oil
minced organic onion
minced garlic cloves
1 pound (455 g) mixed organic mushrooms, thinly sliced
1 Tbs. (15 g) brown rice miso paste
2 Tbs. (30 g) organic almond butter
1 can (14 oz./ 400 ml) organic coconut milk
chopped chives

один /a-deen/ 1. Place the dry mushrooms in a bowl and cover with boiling water, soak for about 20 minutes.

два /dva/ 2. Place a saucepan over medium heat and add a drizzle of olive oil.

три /tree/ 3. Once it warms, sauté the onions and garlic between 5-10 minutes, until soft.

четыре /chye-tir-ye/ 4. Add the fresh mushrooms a cook another 10 minutes.

пять /pyat/ 5. Stir in the miso and almond butter. 

шесть /shest/ 6. Add the coconut milk, dried mushrooms, and the water they have been soaking in. Stir and bring to a boil.

cемь /syem/ 7. Reduce the heat and simmer for 20 minutes.

восемь /vo-syem/ 8. Stir in the chives. Save some for garnish.
  (a) If it is too thick, stir in a little hot water.

You have to like paprika, like a true Hungarian dish, but you can cut back on the amount you use. The potatoes are often served with sausage.

Paprika burgonya (Hungarian)
Serves 6

2 Tbs. (30 ml) olive oil
1 organic yellow onion, chopped
ground black pepper
2 1/2 pounds (1.135 g) organic red or Yukon gold potatoes, peeled or not, then quartered lengthwise
3 1/2 Tbs. (21 g) or less sweet (Hungarian) paprika
2 tsp. (10 g) caraway seeds
1 tsp. (2 g) ground cumin
1/4 tsp. (0,5 g) cayenne pepper or more to taste
2 Tbs. (12 g) chopped dill or 2 tsp. (4 g) dry dill


egy 1. In a Dutch oven over medium heat, add the onions and cook until they are rawboned, about 10 minutes.


kettő 2. Stir in the paprika, caraway seed, cumin, cayenne.


három 3. Add 2 cups (5 dl) of water.


négy 4. Bring to a simmer over medium-high, then cover, reduce to low, and simmer 15-18 minutes. 


öt 5. Uncover and return heat to medium-high; cook, stir for another 10 minutes.,


hat 6. Remove, cover and let stand about 5 minutes.


hét 7. Stir in the dill and season with black pepper to taste.

 Russian potato salad has less ingredients than German potato salads. 

Картофельный Салат (Russian)
/ kartofelʹnyy salat/
Serves 6

A. Potatoes / Картофель /kartofel' :
2 pounds (910 g) organic potatoes
chopped organic scallions or onions
fresh or dried dill
chopped sweet-sour pickles
sliced organic radishes
garnish: dill sprigs

один  /a-deen/ 1. Cover the potatoes water water, bring to boil.


два  /dva/ 2. Reduce to low, cover and cook about 25 minutes.


три  /tree/ 3. Drain and slice thinly.



B. Potato dressing / Картофельная заправка /kartofel'naya zapravka/: 
1 cup (130 g) (dairy-free) organic mayonnaise
1 tsp. (5 ml) Worcestershire sauce
2 Tbs. (30 ml) each: ketchup and white wine vine
1 tsp. (5 ml) horseradish sauce

четыре  /chye-tir-ye/ 4. Whisk all the ingredients.



C. Making the salad:

пять   /pyat/ 5. In a bowl, add the potatoes, scallions/onions, dill, pickles and radishes.


шесть   /shest/ 6. Toss in the dressing.


семь   /syem/ 7. Refrigerate for 45 minutes.


восемь  /vo-syem/ 8. Remove and garnish with the dill springs.
