Serve for lunch with a sandwich if you like. 

Leeks (purjosipuli) are a popular kitchen staple best known for lohikeitto, a traditional and creamy Finnish salmon soup.

Purjokeitto (Finnish)
Serves 4


5 organic leeks, peeled and cut into fourths
2 organic potatoes, diced
3 cups (720 ml) organic beef broth
1 organic egg yolk
1/2 cup (120 ml) (dairy-free) cream, milk, or yogurt
chopped chives

yksi 1. In a pot, add the leeks and potatoes with a cup (240 ml) of beef broth.


kaksi 2. Simmer over medium heat for about 30 minutes.


kolme 3. Process in a blender.


neljä 4. Return to the pot and add the rest of the broth. 


viisi 5. Bring to a boil.


kuusi 6. Stir the egg yolk with the cream/milk/yogurt.


seitsemän 7. Pour into the boiling water, stir quickly.


kahdeksan 8. Cook until almost thickened.


yhdeksän 9. Server hot with the chives on top.

Serves 4

Meatballs:
1 pound (455 g) of organic ground lamb or chicken
2/3 cup (85 g) (gluten-free) bread crumbs 
1 organic egg
2 Tbs. (30 ml) soy sauce or (GF) liquid aminos
2 tsp. (4 g) each: grated garlic and ginger 
olive oil
1/2 cup (120 ml) organic orange juice
optional: Sriracha sauce for "heat"

Sauce:
2 Tbs. (30 g) each organic: honey and chopped green onions
2 Tbs. (15 ml) rice winer vinegar
1 Tbs. (15 g) organic cornstarch + 2 Tbs. (30 ml) water
organic orange zest
1 tsp. (5 g) sesame seeds
1/4 cup (30 g) organic brown sugar

Serve:
organic: cooked rice, streamed broccoli, and sautéed snow peas

~Pan fried or baked in over 425ºF/220ºC (inside temperature chicken 375ºF/191ºC, lamb 145ºF/63ºC)~

1. Mix the chicken/lamb, breadcrumbs, egg, soy sauce/liquid aminos, green onions, garlic, ginger, brown sugar, and optional Sriracha.
2. Form into 12 meatballs.

3. Pan fry: Sear on both sides for 80-10 minutes.
3. Bake in the oven for 15 minutes.

4. Simmer the orange juice, honey, and vinegar.
5. Whisk in the cornstarch and water to thicken
6. Cook about 5-8 minutes.
7. Return the meatballs in the sauce for another 2 minutes.
8. Serve over rice with broccoli and snow peas.
9. Garnish with green onions and sesame seeds.








 

 
Oats can be eaten uncooked as in muesli, cooked with water, milk, or orange juice as in porridge, cookies, and oatmeal desserts. Or here, it is used in pan cakes/waffles. 

Bite of history: oatmeal began over 32 000 years ago when Paleolithic peoples ground wild oats into a porridge for food in southern Italy. It reached the Western Bank's of the Joran Valley ca 11 000 years ago. Ancient Romans brought oats to Britain. It is now a stable in Scotland. The first commercial brand appeared in the United States in 1877.

1 cup (130 g) organic (gluten-free) oatmeal
2 organic apples, grated
2 organic eggs
2/3 cups (150 g) (dairy-free) yogurt or orange juice
1 tsp. (5 g) baking powder
1/2 tsp. (2.5 g) cinnamon
1 Tbs (10o g) chia and flax seeds

~waffles~
1 cup (130 g) organic (GF) oatmeal
2 organic apples, grated
1 organic egg
2 cups (260 g) organic orange juice
2 Tbs. olive oil
1 Tbs. (10 g) each: chia and flax seeds

ūnus I. Mix all ingredients.
duo II. Makes pan cakes or 2 waffles

 It is very popular now, but let's add more favor. 

Avocados, aka alligator pears or avocado pears, were domesticated in the area between south-central Mexico (Olmec civilization) and Guatemala (Maya civilization) more than 5,000 years ago (ca 3000 BCE). 


Makes  one or two servings

  • 1 ripe organic avocado, cut into bite sizers
  • 2 tsp. (10 ml) organic lemon or lime juice
  • basil, thyme, oregano, or parley 
  • to taste, any combination: red pepper flakes or chili powder, Himalayan salt, lemon or black pepper, (smoke) paprika, cumin, garlic or onion powder 
  • optional Mexican spice mixture tajin (chili powder, lime, and salt = spicy, sour, and salty flavors)
  • 1 organic poached or fried egg
  • olive oil
  • 1-2 toasted sourdough bread or gluten-free bead

uno 1. Mix together avocado (not mashed), juice, and spices, except the red pepper flakes/chili powder.  

dos 2. Spoon the mixture onto the toast(s), add half of the soft-boiled on each or on one slice of bread, drizzle of olive oil, and garnish with the red pepper flakes/chili powder.

I'm always thinking of different recipes for ground turkey. Serve as a side dish or on pasta. Make smaller meatballs and serve as appetizers. -Mike
Preheat the oven to 375ºF/185ºC

1 pound (455 g) organic ground turkey
2 grated organic apples, with the skins
2 Tbs. (30 g) hemp or flax seeds
chopped chives
1 Tbs. (6 g) garam masala
1 tsp. (2 g) garlic powder
2 tsp. (10 ml) sesame oil
1 1/2 tsp. (8 ml) soy sauce or gluten-free liquid amino
1 organic egg

1. In a bowl, add turkey, grated apples, hemp/flax seeds, chives, spices, soy sauce/liquid amino, sesame oil, and the egg.
2. Mix and form into meatballs.
3. Add some sesame oil to a skillet and brown them about a minute one each side. 
4. Place them to a lined baking sheet.
5. Bake for 5 minutes, then turn and bake another 5 minutes. (instead temperature for the meatball 165ºF/74ºC).
6. Remove, cover the baking sheet. Rest for 3 minutes.

Turciac crustum  (Latin)

Serves 4
Preheat the oven 400F (200C)

1 1/2 cups (195 g) cooked organic turkey, cut into cubes
turkey gravy
4 cup (260 g) organic vegetables (dice any like onions)
1 sheet (gluten-free) puff pastry, thawed and unfolded
1 organic eggs
1 Tbs. (15 ml) water
spices of choice: Himalayan salt, black pepper, garlic or onion powder, thyme, rosemary, or sage

~Greek (Latin)~

ένα / EN-a/ (ūnus) 1. In a cast-iron skillet, stir in the turkey, gravy, and vegetables.


δύο /THEE-oh/ (duo) 2. Place the pastry overtop of the skillet and trim excess. 


τρία /TREE-a/ (trēs)  3. Whisk the egg and water, then brush onto the pastry. Season with any of the spices. Poke a few holes with a fork. 


τέσσερα /TESS-air-uh/ (quatuor) 4. Bake 25-30 minutes until the pastry is golden brown and filling is bubbling (inside temperature 165F/75C).


πέντε /PEN-day/ (quīnque) 5. Cool a little before serving. refrigerate any leftovers.




Italian cutlets? Wait until see the spacies! You can BBQ if you like, as well.

Cotolette di pollo (Italian)
Serves 6
2-3 boneless organic skinless chicken breast
4 organic eggs
1 1/2 cups 195 g) (dairy-fee) cheese
chopped or dry parsley
2 cups (260 g) (gluten-free) breadcrumbs
olive oil
1 tsp. (5 g) each as desired:
  • paprika
  • garlic powder
  • onion powder
  • basil
  • sage
  • rosemary
  • oregano
  • sage
  • marjoram
  • thyme


uno 1. Heat a grill over the stove or on a BBQ. 
due 2. Mix the spices in a bowl. 
tre 3. Slice the chicken breast into 4-6 pieces. 
quattro 4. Pound the pieces flat. 
cinque 5. In one dish, whisk 1 egg, half of the cheeses and fourth of the parsley.
sei 6. In another dish, mix the breadcrumbs and any spices, with some cheese and parsley. 
sette 7. Dip one cutlet in the egg mixture, then the breadcrumbs.
otto 8. Coat the grill with oil.
nove 9. Cook the first cutlet and dip each of the others, placing them on the grill, also.
dieci 10. Cook 3-4 minutes.
undici 11. Flip and cook the other side, 3-4 minutes (inside temperature 165F / 74C).
dodici 12. Remove and serve with remaining cheese and parsley on top.

These can be made the night before. Serve cold, heated in the microwave, or 2 minutes in the oven. Save a few for a snack.
Makes 12
Preheat the oven to 350F (175C)

1/2 tsp. (2,5 g) each: black pepper, Himalayan salt, marjoram, parsley, and paprika
olive oil spray
8 organic eggs
1/2 cup (120 ml) (dairy-free) yogurt
1/2 cup (65 g) each organic: grated sweet potato and chopped spinach
top with sliced organic green onions

optional organic chopped:
  • onion
  • bell pepper
  • (dairy-free) cheese
  • tomato
  • ham
  • zucchini
  • garlic
1. Combine the spices in a bowl.
2. Grease or spray two 6-cup muffin tins
3. Whisk the eggs and yogurt with half of the spices.
3. Add the rest of the spices and any optional items to the sweet potatoes. Mix.
4. Fill the muffin tins.
5. Add some chopped spinach.
6. Pour the egg mixture into the tins.
7. Bake for 18-20 minutes.
8. Sprinkle some chopped green onions on each one.
Zucchini is in season. This quick and easy dish to so delicious. Make these for a snack, an appetizer, or a light meal!

/hobak huchim/
Makes 12 fritters or 
2 medium size pancakes

A. Mixture:

1 medium large organic zucchini, shredded (or 2 cups shredded zucchini)
1 tsp. (5 g) sea salt
1 organic scallion, finely sliced
1 organic clove garlic, finely minced
½ tsp. (2,5 g) ground black pepper
1-3 tsp. gochugaru 
(고추가루) (very hot Korean chile flake; optional) or mix of paprika and cayenne pepper to taste
1 Tbsp. soy sauce or gluten-free liquid aminos
1 tsp. sesame oil
1 organic egg, lightly beaten
1 ½ cups (195 g) (gluten-free) flour
olive oil for frying


B. Dipping sauce: Combine all the ingredients in a small bowl.

2 Tbsp. soy sauce or liquid aminos
1 tsp. sesame oil
2 tsp. rice vinegar
½ tsp. organic sugar
pinch of gochugaru (optional)
pinch of sesame seeds (optional)


일 /il/ 1. Add the shredded zucchini and salt into a mixing bow, stir, massage, then lightly squeeze out the liquid.

이 /ee/ 2. Stir in the scallion, garlic, pepper, gochugaru, soy sauce/liquid aminos, sesame oil, and egg. 

삼 /sam/ 3. Stir in the flour, sit for 10-15 minutes. It can be covered and refrigerated.

사 /sa/ 4. Heat the oil in a large skillet over medium heat.

for fritter:
오 /oh/ 5. Pour about 1/2 inch (12 mm) of oil or for a softer fritter use just a drizzle of oil.

for pancake:
오 /oh/ 5. Scoop a spoonful of batter, about 1/3 cup-1/2  (45-65 g).
               
육 /yook/ 6. Cook until crispy and golden brown, about 3-5 minutes on each side.

칠 /chil/ 7. Drain each fritter or pancake on a plate lined with a paper towel.

팔 /pal/ 8. Serve with the dipping sauce.

The Korean, fermented cabbage (kimchi) might not be for everyone and for breakfast (!), but I like kimchi, so this hits the spot for me. I can't say the same for the rest of the family-Mike

Serves 2
(leafovers for me)
Preheat the oven to 450F (230C)

unpeeled organic potatoes
sliced organic scallions
olive oil
organic kimchi, drained squeezed dry, and chopped
4 organic eggs
fresh parsley (or cilantro if you like it)
spices or herbs of your choice

일 /il/ 1. Spray a backing sheet with organic vegetable oil.

이 /ee/  2. Shred or grade potatoes.

삼 /sam/ 3. Cover with cold water and let sit for 5 minutes.

사 /sa/ 4. Drain, rinse, dry the potatoes, they squeeze dry. Set aside in a bowl.

오 /oh/  5. Add scallions and oil to the potatoes, toss.

육 /yook/ 6. Distribute the potatoes in even layer on the sheet. Bake 30-35 minutes.

칠 /chil/ 7. Remove, flip the hash browns, then sprinkle kimchi over the top.

팔 /pal/  8. Using the back of a spoon, create holes in the potatoes.

구 /gu/ 9. Crack 1 egg into each hole.

십 /sip/ 10. Bake until the eggs are to your desire. 
 (a) 7-8 minutes: runny yolks
 (b) 9-10 minutes: self-cooked yolks

열하나 /yeolhana/11 Remove and sprinkle with cilantro or parsley and any spices/herbs you like.


Saffron adds a different flavor to stir-fry rice.

2 Tbs. (30 ml) each: olive oil and rice wine
6 saffron threads
2 chopped organic garlic. cloves
1 Tbs. (15 g) chopped ginger
sliced organic mushrooms
1 minced organic onion
black or white pepper to taste
2 cups (260 g) day-old cooked rice
1 Tbs. (15 ml) soy sauce or gluten-free liquid aminos 
1 Tbs. (9 g) sesame seeds
4 sliced organic scallions, green and white parts
4 organic fried eggs (with or without soft yolks)


~Chinese (Cantonese, number = tones*)~

一 /ling4/ 1. Pour wine into a bowl, glass, or jar.


二 /jat1/ 2. Crumble saffron into the wine and let soak.


三 /saam1/ 3. Use a wok, hat the oil over high heat until it begins to smoke.


四 /sei3/ 4. Add garlic, ginger, and mushrooms. Stir-fry for 2 minutes.


五 /ng5/ 5. Add onions and pepper. Stir for a minute.


六 /luk6/ 6. Add the rice, soy sauce/liquid aminos, saffron with the wine., sesame seeds, and scallions. Stir-fry a minute.


七 /cat1/ 7. Divide stir-fry into four bowls. Top each with a fried egg.

κεμπάπ γαλοπούλας (Greek)

Makes +5 servings or
10 skewers
Preheat the oven to 425F (220C)

2 pounds (910 g) organic ground turkey
1 cup (130 g) (gluten-free) breadcrumbs
3/4 cup (95 g) chopped parsley
10 ounces (285 g) frozen organic spinach, thawed and squeezed dry
1/2 cup (65 g) feta or diary-free goat cheese
1 organic egg
1 chopped organic shallot
1 Tbs. (9 g) dried oregano and cumin
2 chopped organic garlic cloves
pinch or two cayenne pepper and black pepper
3 Tbs. (45 ml) olive oil
10 thick wooden skewers soaked in water for 20 minutes
tzatziki sauce and hummus (see below)

1. Combine all the ingredients except the oil. Mix well.
2. With damp hands, mode the meat around the skewer into a sausage shape, about 5 inches x 2 inches (13 cm x 5 cm).
3. Brush kebabs with oil and bake on a foil lined baking sheet for 25-33 minutes, until meat temperature of 165F (74C).
4. Serve with tzatziki sauce and hummus.

LIVER! Really?! 
I use to eat "liver and onions" for several years, but I started to think of the function of a liver. Hence, I stopped eating it. -Mike

So I googled "liver": Liver is one of the most nutritionally dense foods on the planet." Ahh? "Just a single serving can help your recommended amount of vitamin A, B, copper, iron, and folate."

Most common: cow (beef), chicken, duck, lamb, and pig.

But is it safe? "In truth, the liver does play a role in breaking down (and eliminating) toxins from the body, but it does not store them."

If you do no what to eat liver and onions, then try this Finnish casserole.

Vuoka maksan ja riisin kanssa (Finnish)
Or
Maksalaatikko
"Liver Casserole"

Serves 5-6
Preheat oven to 350F (175C)

1 pound (455 g) beef liver, partially frozen
3 cups (535 g) cooked rice
2 1/2 cups (600 ml) (dairy-free) milk
1 beaten organic egg
2 Tbs. (30 ml) (dairy-free) organic butter
1 chopped organic onion
4 Tbs. (60 ml) organic dark corn syrup
1/2 tsp. (1 g) each: white pepper and ground marjoram
1 cup (130 g) organic raisins

yksi 1. Mix together the rice and milk.


kaksi 2. Add the egg.


kolme 3. Heat the butter in a frying pan.

 

neljä 4. Brown the onions.


viisi 5. Add the milk-rice mixture.


kuusi 6. Stir in the syrup, pepper, marjoram, and raisins.


seitsemän 7. Use a sharp knife to slice or chop the liver.


kahdeksan 8. Stir it into the rice mixture.


yhdeksän 9. Pour into a buttered casserole dish.


kymmenen 10. Bake for an hour. (liver temperature 160F/71C)


yksitoista 11. Serve hot.

 You have heard of Swedish Meat Ball (pork and beef), try the Finnish version.


Lihapyörylöitä (Finnish)
Serves 4

3/4 cup (95 g) (gluten-free) bread crumbs
1 cup (240 ml) (diary-free) cream
1 1/2 pounds (680 g) grass feed beef
1 minced organic onion
1 beaten organic egg
1 tsp. (2 g) allspice
2 Tbs. (20 g) (diary-free) organic butter
2 Tbs. (30 g) (gluten-free) flour
1 1/2 cups (360 ml) (dairy-free) milk


yksi 1. Soak the bread crumbs in half of the cream.


kaksi 2. Mix the beef and onions with the bread crumbs.


kolme 3. Add the egg and allspice. Mix well.


neljä 4. Form the mixture into balls.

 (a) Small ones for appetizers.

 (b) Large ones for main dinner.


viisi 5. Melt the butter in a frying pan and add the meat balls.


kuusi 6. Brown all sides.


seitsemän 7. Remove from the pan.


kahdeksan 8. Brown the flour in the pan.


yhdeksän 9. Whisk the rest of the cream and milk for the gravy.

 (a) Add a little water if it is too thick.


kymmenen 10. Place the meat balls back in the frying pan, cover, and cook for about 25 minutes on low heat. (Temperature reaches 145F/63C.)


yksitoista 11. Serve with the gravy.

6 saffron threads

2 organic cloves of garlic, crushed and chopped
1 Tbs. (15 g) chopped ginger
sliced organic mushrooms
diced 1 organic onion
2 cups (260 g) cold cooked organic rice
1 Tbs. (15 ml) soy sauce or gluten-free liquid aminos
sesame seeds
cut organic scallions, green and white parts
4 fried organic eggs
optional: black pepper


~Frying time might vary to your taste.~

一 /ichi/ 1. Soak the saffron in a bowl of rice wine.


二 /ni/ 2. Heat the oil in a wok over high heat.


三 /san/ 3. Add garlic, ginger, and mushrooms. Stir for 2 minutes.

五 /go/ 5. Add the rice, soy sauce/liquid aminos, saffron with rice wine, sesame seeds, and scallions.
